Here is my current app list. I'm still using my S3, but had a post-OTA update crash a few weeks ago, so it's interesting to see what apps survived the cull when I restored my phone. I am using only the free versions of all apps mentioned, with no add-ons, because I can't get Play Store to accept my bank card :( Happily, there are a lot of great free apps out there.
First, my top and bottom 5 apps by ease of use, frequency of use, prettiness, and general love (or lack thereof):
Top 5
Floating Toucher/Sidebar Lite/SwipePad
Snapseed
Photo Editor
Pixlr Express
Keep
Notable (yes, I cheated, that makes 6 or 8 apps)

Bottom 5
Handwrite- I'm not sure why, but i think because it's not a very pretty app. I also wish i could create layers so I can draw over typed notes. It does produce neater handwritten notes than S Memo though.
LinkedIn just not very user-friendly, although it's definitely getting better with time. Thing is, the website is much worse.
Facebook takes the bottom 3 slots. I will say, though, I haven't updated it to the latest version, so maybe my hatred is misplaced.

Adobe Reader
I'm doing some studying at the moment, and it's really great to be able to switch to my phone to read pdfs when the power goes off (which is becoming more frequent again). This app does what it does really well.

Amazon Kindle /Moon Reader
I read a lot on my phone, and Amazon has a LOT of free books. IFTTT also tells me when other books become free, and I always have more books than I could possibly read.

You know how sometimes you want to share something to more than one app? This is the app for you. Also, it requires no special permissions.

Any.do
Still love how beautiful this app is. I use it for reminders during the day because it has a nag factor built into its reminders, and also +1 that i can snooze the reminders easily.

Aviary
It's getting prettier (which obviously matters to me), and is good for basic edits (which I never use it for) and filters, too (nice ones).

BBC news
I was startled the other day by the sound it made when a push notification popped up. For a second I thought I had a TV in my pocket. Because, you know, one does.

I only use this app when I want to use an alternative Bible version. It's very user-friendly and looks nice, but I find MySword (below) faster.

This app is finally getting better, although it's still fairly basic. I wish they'd let me decide where pictures appear in my posts though.

Buffer
I open Buffer at least 50 times a day to post to Twitter and Facebook. I post status updates and also share articles through it. The Buffer people are also very engaged with the people who use their app, which is super great.

Camera (stock Android camera)
This was a sideload from somewhere online (easy to find). It's a very nice camera, but you know how these things are when they aren't tested for your device. It seems to make my phone overheat a bit, and the gallery it comes with seems to crash here and there. I love how usable it is though- it's much more intuitive than the S3 camera. It also has wonderful photo editing functions, including filters and frames.

Camera 360
I probably don't use this app as much as I could, but only because I have so many options. My fave function is the ability to add audio to a photo, but it's not much fun if you can only play that audio through the app. I have deleted photos I took with C360 by accident from my normal gallery because I thought they were meh, only to remember they had audio attached. It also has great filters and stuff.

Digg
I haven't opened this since I had my phone fixed, but the webapp's a reasonably nice alternative to Feedly (- but who needs an alternative to Feedly, I hear you ask). The app is relatively new, and so I'm sure it will change and grow.

Drive
Google is making Drive better and better, and integrating it more with its other services, so I find that I'm using it more now. Still wish I had more storage though.

Dropbox
Still my gold standard for cloud storage. After my phone crashed, I started to wonder what would happen if Dropbox lost my data? Anyway, lately I've backed up a lot more stuff to DB. When my phone crashed, I was thrilled to realise I hadn't lost much at all, and I found a new, heartfelt appreciation for backing up. Also, after the death of Catch, I share simple lists with my sister through a shared folder in DB.

Dynamic notifications
I really, really wish this app worked properly on Samsung phones. I don't want to have to turn off my TTS engine for it to work. I find that i always eventually end up uninstalling apps that make my phone talk back to me when I don't want it to (like Light Flow). If that sounds like Greek to you, don't worry. This is a pretty and useful app that will work fine for almost anyone else (Android 4.1+ I think).

Evernote
There's not a lot you can say about Evernote that doesn't end up sounding like hyperbole, so: this is my primary serious note-taking app.

Facebook
I don't use this app. I kept it for photo uploads (because then you can upload to specific albums), but you know if you get uploads stalling halfway or even sometimes at 99%- multiple times- you eventually give up. I now email my pictures to Facebook. I suppose if you want to keep up with your friends' news, then this app could be for you. I'm not a Facebook power user- most of my flow is one way :)- and I really only check notifications and messages, so I use Opera Mini (below). I uninstalled Messenger as well because I found it was using a lot of background data. I may uninstall Facebook soon to see if I can do without it.

Flipboard
I have kind of stopped using Flipboard, and i think that might be Feedly's fault. Also, Flipboard seems more image-orientated than Feedly or Digg, which uses up more data. Without the images, it's just a bit less useful.

Floating Toucher/Sidebar Lite/SwipePad
I have fallen in love with these apps, which add very useful shortcuts to my apps without clogging up my homescreen. They all do their work in different ways, and I use all of them many times a day.

Handrawn/Handwrite
I like the idea of handwritten notes, but I don't like Handwrite's interface at all. Handrawn is much prettier. I do have an alternative in S Memo, but Handwrite allows (makes?) me to write along a line, so it produces much neater notes.

Hangouts
Can I admit here that I've never participated in a hangout? Somehow, there are always alternatives for what I want to do. But because I will in the future, and because Talk became Hangouts, the app stays.

Of course. I now post about 95% of my photos through Instagram (the other 5% being private photos). IFTTT posts from there to my blog, and also backs up to Dropbox and Drive.

Instawthr
This app allows me to annoy my friends with frequent weather updates. The state of the weather interests me. I like to talk about it. I like this app because it posts with an image-great idea! - but it does have known bugs, so be warned.

Kii Keyboard
I am still mourning the loss of Swype. {*moment of silence*} Since I currently can't buy Swype, I've been testing all the other keyboards I had installed, and finally settled on this one. The free version is actually quite excellent. My only quibble is with the not-so-good word prediction when swiping (it can drive me crazy), and unfortunately you can't blacklist words in the free version. It's an acceptable alternative to Swype, though, and the dev works hard to develop the app. I find that I do need to be able to use gesture input (swipe) to be able to type comfortably, but when I don't mind ordinary typing, then Hacker's Keyboard is my best choice.

I keep this because I can use it to crop pictures into different shapes, and layer them (so, collages done differently). There are also loads of stickers you can apply to your images.

Markers /Mobile sketch
The two best apps I've found so far for doodling and sketching. They allow me to save images with transparency (pngs, to be specific), which I can then layer over other images. Mobile sketch is currently being a bit buggy (save seems to get stuck in a loop, but eventually completes)- but they both work, are simple to use, and have no learning curve to speak of.

MindMemo (free) / Schematic Mind
I've struggled to find a mind mapping app that's easy to use, looks good, and is free. These two are OK, but Mind Memo doesn't look great, and Schematic Mind looks wonderful but doesn't let you export the mind map as an image (yet). I should mention Coggle here, which is lovely, but is a webapp.

I haven't used this yet, although I installed it two weeks ago. I think it's because the main task I'd use it for is to silence my phone, and Silence (below) already does that marvellously.

Phonto
Phonto is one of two apps I use to add text to images. My only issue with it is that very fine fonts don't render very well, almost disappearing. I do like that I can use my own fonts as well. If you only have one app for adding text to images on Android, Phonto is that app.

Photo Editor
This is one of a group of apps I use for image editing. It's a deceptively simple app, packing a lot of punch in a very small package. The dev always adds big new features with every update, and this app is sooo worth having on your phone. Btw, there are a few apps with the same name; this one is by macgyver (or dev.macgyver). This app and Snapseed tie for top place on my list of image editing apps.

Pic Collage
I've spent many a happy hour creating collages in this app. Remember the pngs I mentioned above? Well, this app allows me to mix them with other images to make fun collages to delight my niece with. I also created pngs on the computer (mainly using Illustrator) just for this app.

Pixlr Express
This just got a big update that made it soooo beautiful (well done devs!), and also introduced collages, which were missing in the mobile app, but were available in the webapp. I know my heart stops for things that are weird to everyone else, but my heart did stop for this beautiful update. Another image-editing must.

Pixlr-o-Matic
OK so now this has become the poor country cousin to Pixlr Express. I hope an update is coming to this as well, or that they merge them into one app. You actually no longer need this app if you have Pixlr Express.

I actually disabled this recently, because after my phone crashed, someone was able to flash my phone without any input from me- so I'm like, what's the point? Also, Google can now tell me the location of my phone (more or less), so I need to think about why I need Prey. So.

Pulse
Pulse is great for catching up- I get some of my tech news through it- but I still don't like the home screen at all. Once you're reading articles, it's quite nice, and scrolling from one article to the next is also nice. I also don't like the changes they made to sharing (-highlights?? Why?!), but I still use the app.

Silence
This app keeps me polite. Seriously, it does. It silences my phone every night at 8 pm, so I don't have to curse at my friends, and also in time for church, so the pastor doesn't need to glare at me. It also unsilences my phone after church, and in the morning at a decent time. When my S3 was dead, and I had to use my Nokia, this was the app I missed the most.

New to me, this is actually the app I'm typing up this post in. Beautifully clean interface, basic note-taking app. Also seems very stable, so it doesn't look like I'm likely to lose my notes because it stopped working while I was typing.
